Cajun Seafood Packets

These Cajun Seafood Packets have got to be one of my family’s favorites! And you can cook these anywhere. In the oven, on the grill, over a camp fire, and little to no mess to clean up. You can put just about any kind of meat and seafood into these packets. You can even select what veggies you want in these packets as well. This recipe will make 12 packets, I make them for my husband and I so I cut it in half for 6 packets. They are so good your family will ask for them all the time. So let’s get cooking!

First let’s get everything together

  • Heavy duty foil
  • 6 count Pk of Frozen Corn on the Cob (If you buy whole ears you will only need 3, cut them in half)
  • 12 oz Pk of Frozen Cooked Medium Shrimp
  • 1 Lb of Smoked Sausage
  • 4 Red Potatoes
  • Butter or 1/2 cup of Olive Oil
  • 1/2 cup of Chicken Broth
  • Cajun Seasoning

So many Choices Lets get Started

First lets get all the ingredients out and ready. Shred up 1 cup of Chicken. I like my corn on the cob very tender, so I let it boil as I make packets. My daughter just puts them in frozen and they do come out fine. Put your shrimp in a colander, this is when I detail them, run cold water over them and let them drain. Cut your Smoked Sausage in 1/4 inch circular pieces. Any smoked sausage you like, Beef, Polish, or Kielbasa, you get what I mean. Cut the potatoes into fourths, Red potatoes are good but I prefer to use Russet potatoes. New potatoes work nice as well. Cut them up into the size you would like. You want to pull out 6 long sheets of heavy duty foil.

Making the Packets

Second, you want to take those sheets of heavy duty foil and fold them in half. Fold the edges over about 3 times to get a good seal. Then you want to do the same with the corners, just to make that seal is very secure, leave the top open. Now you have your packets, I like to call them pockets because that’s what they look like. If cooking in the over preheat it to 400 degress.

Put it All in

Now we are ready to put everything into the packets. I always put the corn on the cob in first, it will help keep the packets upright, one cob per packet. I count out everything, pieces of shrimp, sausage, potatoes, whatever you are putting into your packets. Now my husband is a big shrimp lover and I love sausage, so he gets more shrimp and I get more sausage. Put all your meat and veggies into your packets and add your Cajun seasoning, salt & pepper, butter (I use 1/2 TBSP per packet) or olive oil, and Chicken Broth. If cooking on the stove you will want to use about 1/4 cup of chicken broth per packet so it doesn’t dry out.

Seal the top of each packet up and place on a cookie sheet. Place in your preheated oven for 35 minutes and let cool for about 5 minutes. We like to have Cocktail Sauce with these packets, but they are great plain as well. And any leftovers will heat up nicely. Packets are easy to cook on the grill or even over a campfire. Just make up the packets and place them into a cooler until you’re ready to heat them up. You will absolutely love the flavor and the easy clean up. Bon Appetit!
